Fall Baking: Apple PastriesPatti - October 19, 2018

Our weather is finally starting to turn fallish - the fog this morning put me in the mood for fall desserts! Today's post is an easy apple turnover, made especially easy if you happen to have frozen apple slices on hand (thanks to a visit from my mom a month ago, I do). This imprecise recipe can be tweaked however your tastes dictate.

Apple Pastries

1 cup chopped apples

2 Tbsps brown sugar

1 tsp cinnamon

1 tsp butter, for dotting the tops

1 package puff pastry

Instructions

Preheat oven to 200 °C (400 °F). Mix apples, brown sugar, and cinnamon. Spoon filling onto prepared pastry squares. Dot with butter. Bake for 20 minutes.

First, chop your apples. Mine had been soaked in lemon water before going in the freezer, but if you use fresh apples, you can add a few squirts of lemon juice to add some tartness.

Next, add your brown sugar and cinnamon. My brown sugar is so pale because I have to make it myself - I definitely miss being able to buy it off the shelf!

Cut your puff pastry into squares. My package gave me 15 squares measuring 8 cm x 8 cm.

To make the diamond shape: cut a second square about 1 cm (1/2 inch) in from the edges, leaving two opposing corners uncut. Grab the corners that are cut and fold them over each other, flattening so that it forms a diamond shape.

You can find several video tutorials on this process by searching "diamond puff pastry".

To fill: simply place a spoonful of apple filling in the center of each diamond.

Dot the top of each pastry with butter. Bake at 200 °C (400 °F) for 20 minutes.

Dust with powdered sugar and enjoy with your favorite fall beverage!

This looks so delish! I’m definitely going to try them! I already have apples cut up and frozen by cupfuls also! We were blessed to be able to go picking at trees too full for the owners!
Patti: Cool! I think my apples came from Vicki King. She used all she could, then my mom used all of hers that she wanted, and I got the rest. "The rest" turned into 6 liters of applesauce and at least 9 liters of apple pie slices!!
